A Kwazulu-Natal taste Sensation

Durban Lamb Curry

Ingredients

  • 2 tablespoons of Cooking Oil
  • ¼ teaspoon Fennel Seeds
  • 1 finely chopped Onion
  • 1 finely chopped Green Pepper
  • 2 Grated Tomatoes
  • Bay Leaves, Cinnamon Sticks and Curry Leaves
  • 1 teaspoon Ground Ginger and Garlic
  • 3 Potatoes
  • 1 cup Pre- Boiled Sugar Beans or Red Speckled Beans
  • ¼ teaspoon Turmeric Powder
  • 4 teaspoons Chillie Powder
  • ½ teaspoon Garum Masala
  • Water
  • Salt

Instructions

  1. Add Cooking Oil to the pot on medium heat.
  2. Add ¼ teaspoon Fennel Seeds, cook until roasted.
  3. Add Onions and Green Pepper cook until golden brown.
  4. Add Tomatoes and wait until the water has evaporated.
  5. Add Cinnamon Sticks, Bay Leaves and Curry Leaves.
  6. Add ground Ginger and Garlic.
  7. Add Turmeric Powder, Chillie Powder and Garum Masala.
  8. Add Potatoes and mix well. 9. Then add a little water.
  9. Add Sugar Beans and Salt.
  10. Leave to cook until potatoes are soft.
